As a busy mother of three I have a love affair with my crock pot. My crock pot allows me to cook healthy and yummy dinners for my family and saves me from ordering out. One of the foods I love to cook are curries. We make a curry similar to this on the stove, but I changed it up a bit to be crock pot friendly. This recipe is really easy you simply throw all the ingredients in, turn your crock pot on, and walk away. You can serve this curry with rice, quinoa, or leave it as a stand alone. Enjoy!
2 cloves garlic (crushed)
3 tablespoons of standard curry powder
2 pounds of frozen or fresh chicken breast meat (about three or four breasts depending on size)
3 tablespoons of brown or white sugar
1 14 ounce can of coconut milk
1 24 ounce jar of regular tomato spaghetti sauce
2 14.5 ounce cans of stewed tomatoes (do not drain you need juice)
1 teaspoon each of black pepper and salt to taste
Place frozen or fresh chicken breast in the crock pot
Add in the rest of the ingredients lifting the chicken breast to make sure the sauce mixture gets under them
Turn your crock pot on Low for 8 hours (your chicken should fall apart easily into smaller chunks when cooked)(if you use fresh chicken breasts your cook time should be cut in half)
This chicken coconut curry is super easy to throw together and makes your house smell wonderful. My kids love this chicken coconut crock pot curry and always ask for more. It freezes well and usually tastes even better the second day!
